Eva's Butter Brickle Coffe Cake

Yum... my new downline, Eva can cook!  She made this fabulous coffee cake for her first workshop.  We really had to control ourselves on this one, it was so tasty... and re-warmed in the microwave made it even yummier!

Brickle Coffee Cake


1 stick butter or margarine (1/2 cup) softened

2 cups flour

1 cup brown sugar

1/2 cup granulated sugar

1 cup buttermilk

1 tsp baking soda

1 egg, beaten

1 tsp. vanilla

1/2 cup Heath Brickle Bits


1/2 cup reserved flour mixture

1/2 cup Heath Brickle Bits

1/4 cup pecans, chopped


Blend first four ingredients set aside 1/2 cup of this mixture to use in topping, then add next five ingredients and blend well.  Pour into prepared 8 x 10  pan. Mix topping ingredients together and sprinkle over pan ingredients. 

Bake at 350 degrees approximately 40 minutes, or until toothpick inserted comes out dry.
