Gift Card Tin.. And requested recipe

Kind of a funny combination.. I have a busy day ahead of me.. so this is a quick one pulled from my stash!
This is a gift card tin.. you've seen them in craft and retail stores.. they have an inexpensive plastic gift card depression on the inside. Sometimes, they are decorated with painted pictures on the outside. When I saw blank ones at the local HL store, I though.. hmmmmm.. I could make that so much better!

All materials on this project are Stampin' Up! The WONDERFUL stamp is about to retire "Holiday Woodcuts" has been around for many years (hint: the item number is 10006.. that's an OLD number). Although it is retiring, it won't be leaving my stash.. it is another of my favorites for the holidays!

The inside was fitted with a piece of white cardstock on the base of the plastic holder.. and a band to slip the gift card under, holding it in place. The upper portion has a greeting. The outside band serves as the closure and tag for this handy and cute gift.. pedicure.. shopping spree.. home depot?

The second item I am sharing today is by request... from time to time I may add one or two recipes because my friends often joke that this should be my cookin' AND stampin' blog. I enjoy cooking.. and love herbs and spices. This one is not spicy.. but has lots of flavor.. and I've always been willing to share my recipes.. so here goes!

White Chicken Lasagna

Oven 350
Serves 6

2 TBSP butter - melted
2 cloves garlic - crushed
2 TBSP unbleached flour
1/2 tsp salt
1 C skim milk (warm in microwave)
1 C Chicken Broth (low sodium or home made)
1 C shredded cheeses (mozarella or mozarella, fontina, provolone mix)
1/2 C parmesan cheese + 1/4 for topping
1/4 C chopped white onion
1/2 tsp basil
1/2 tsp oregano
1/4 tsp white pepper
1 pkg UNCOOKED Lasagna noodles*
1 1/2 C Cooked Chicken
1/2 C Ricotta Cheese
1/2 box frozen spinach, cooked and drained

*I prefer the short/wide/thin Barilla brand noodles.. I think they are called authentic italian noodles.. not the long thick skinny ones that are so available.. but you can use them too.

Preheat oven to 350 degrees.
  • Heat butter in saucepan over low heat until melted, then add crushed garlic.. sautee for 30 seconds.
  • Stir in flour and salt. Cook, stirring constantly until it takes on a slightly golden color (just a minute or two).
  • Remove from heat, and whisk chicken broth into mixture.
  • Add warmed skim milk and return to burner, continue to cook over medium heat until mixture comes to a boil. Allow this mixture to boil for appx one minute.
  • Reduce heat to low and stir in cheese shredded cheese mixture, and 1/2 C parmesan.. stirring until cheese is melted..
  • Spread 1/4 of the cheese sauce in UNPREPARED 9x7x2 glass or ceramic baking pan.. (or 8x8 if you don't have that size).
  • Top with layer of uncooked lasagna noodles.. it's ok if they overlap slightly, break noodles to make them fit your pan.
  • Top with half the ricotta cheese over the noodles, and 1/4 of the cheese sauce.
  • Top with a layer of noodles
  • Top with Chicken, spinach, 1/2 ricotta and 1/4 cheese sauce.
  • Top again with a layer of noodles
  • Top with remaining cheese sauce and 1/4C parmesan

Bake uncovered for 30 minutes

This is great with a simple tossed fresh green salad and a loaf of garlic bread.. how simple!
